Oil may be the invisible ingredient in fried foods, but it clearly stands out as a critical factor in product quality. Heat and Control fryers treat oil as carefully as your product. Precise temperature control, fast fines removal, and rapid oil turnover deliver the freshest, most consistent fried foods possible. Renowned for clean, dependable operation, our fryer systems are available in modular designs that dramatically reduce the time and cost of installation.


HeatWave Fryer - oil curtains over chicken
Using curtains of oil instead of immersion, HeatWave transfers heat efficiently and has the lowest system oil volume of any continuous fryer. Fines are removed immediately after oil contacts the product, so food is always exposed to filtered oil and fryer cleaning is reduced. Ideal for coated foods, product orientation remains consistent.

Breaded Products FryerIndirect-Heated
Our Breaded Products Fryer's capacity is not limited by the number of heating elements that will fit in the pan. Oil is heated outside of the fryer to boost production output, reduce oil volume and deliver the cleanest frying with the most responsive, consistent temperature control.

Economical, continuous frying of a wide assortment of foods is easy with our direct-heated fryers. Choose direct gas-fired or thermal fluid oil heating, and a variety of product conveyors to perfectly fit your application.

Compact FryersCompact Fryers
Here is the continuous frying alternative to batch cookers. Ideal for pilot plants, small capacity production or institutional food service operations, our Compact Fryers provide a large frying area from a small footprint.

Fryer Support Modules
Dramatically reduce the time and cost of fryer installation and start-up. Oil filters, pumps, heat exchanger, storage tank, and piping components are pre-assembled on a compact skid with single-point utility connections.


Drum Pre-Filter
Filter the total system oil volume in less than a minute on average. A rotating mesh covered drum continuously removes fines and deposits them into a waste container.

Continuous Belt Filter
For primary or secondary filtration, flour sized particles are removed on a stainless steel mesh belt. Add a paper overlay to polish oil.

Continuous Paper Filter
Oil passes through filter paper for efficient removal of fine particles. Clogged paper is automatically discharged and replaced with clean filter paper.

Canister Filter
Economical primary or secondary filtration with reusable filter bags. Pre-assembled with filter canisters, pump and interconnecting piping.

Heat Exchangers

Vertical coil design saves space and rapidly heats oil with minimal thermal degradation. Burner heat flows twice over the coil for peak efficiency and uniform heat transfer.

Shell & Tube
Continuous oil circulation inside heat transfer tubes with gentle thermal fluid or steam heating provides fast and uniform heat transfer and rapid adjustment to fryer loads.
